If you want to enjoy this recipe but don't have time to wait for the flavors to meld overnight, simply prepare it as early in the day as possible and be sure to squeeze the liquid from the shredded cucumber. *TIP* Since I started the AIP I always keep a couple of cans of coconut milk in my refrigerator so I have coconut cream available if I need it. Zero Waste: If you're using cream from the tops of coconut milk cans (instead of straight coconut cream in the can) be sure to reserve the watery liquid that remains - this is delicious in a smoothie.
