Easy enough for a weeknight, fancy enough for guests! This Shrimp and Pineapple Fried Cauliflower Rice is one of my all-time faves. It’s a one-pot meal that looks fancy as heck but comes together effortlessly.

Juicy shrimp, sweet fresh pineapple, and perfectly seasoned cauliflower rice combine for a dish that’s as practical as it is impressive. And for the ultimate wow factor? Serve it right in the hollowed-out pineapple—it’s tropical vibes and table flair in one.

Shrimp and Pineapple Fried Cauliflower Rice

Ingredients

Instructions

  1. Wash and dry cauliflower thoroughly and remove greens. Cut cauliflower into four pieces and use a box grater to grate the cauliflower, using the large blades. You would grate this just like you would grate cheese. The cauliflower should resemble rice (or you can just use frozen cauliflower rice).
  2. Season shrimp with salt and pepper to taste.
  3. Add 1 tablespoon of olive oil or avocado oil to a large sauté pan over medium heat. Once oil is warm, add shrimp and cook until opaque, about 5 minutes.
  4. Once shrimp is no longer translucent (light pink, not browned), transfer to a place and set aside.
  5. Add remaining tablespoon of olive oil or avocado oil and sesame oil to pan and heat (use more of the other oil if you've not reintroduced seed oils).
  6. Add green onions and garlic to pan and cook for about 1 minute. Next, add riced cauliflower and cook, stirring frequently for about 5 minutes, or until cauliflower rice has softened.
  7. Add coconut aminos to rice and cook four about 1 minute.
  8. Next, add pineapple and shrimp to cauliflower and stir to combine. Cook for an additional 1 to 2 minutes.
  9. Garnish with cilantro and serve!

Notes

Pineapple Prep:

Don't be intimidated to serve this in the pineapple, the prep is easy! Simply lay the pineapple on its side and slice lengthwise. From there, cut on both sides of the core to remove it. After that, you can score around the edge with a knife or simply start scooping with a spoon. You'll likely have a lot of juice, so reserve that for a beverage. Be mindful that if you end up with more of a crushed pineapple texture, you'll want to use a little less that you would if you manage to dice it.

If you need to keep your meals coconut free, try this soy sauce substitute instead.
