Traditionally, Irish Stew uses lamb, but lamb is difficult to come by, and it’s definitely not the most economical meat choice. If you have the ability and the means to purchase lamb for this recipe, please do! But for this AIP recipe, we’ll use beef stew meat.

Traditional Irish Stew also includes white potatoes. So, to make this AIP Irish Beef Stew AIP-friendly, use white sweet potatoes instead – they’re more starchy and less sweet (learn more about them here).

Some Irish Stew recipes also include things like tomatoes, tomato paste, and/or red wine. But, in the interest of keeping this recipe AIP-compliant and as simple as possible, these non-compliant ingredients are omitted … it really doesn’t need them, anyway.

Instant Pot Irish Beef Stew

Traditionally Irish Stew uses lamb and white potatoes. For this AIP recipe, I used beef stew meat and white sweet potatoes instead.

Instructions

  1. Turn the Instant Pot to sauté and add the avocado oil.
  2. Once it’s hot, add your stew meat and sear on all sides (about 5 minutes).
  3. Turn the Instant Pot off and add the chopped onion, garlic, coconut aminos, sea salt, thyme, bay leaf and broth.
  4. Seal and set to the stew setting for 30 minutes.
  5. When the cooking cycle is complete, do a quick release of the pressure, taking care not to burn yourself on the steam. Cover the release valve with a towel to prevent splatter.
  6. Remove the bay leaf, and add the chopped carrots and white sweet potato.
  7. Seal the Instant Pot and set to high pressure for 4 minutes.
  8. When the cooking cycle is complete, do a quick release of the pressure again, taking care not to burn yourself on the steam. Cover the release valve with a towel to prevent splatter.
  9. Give the stew a good stir and serve!
  10. Store in an air-tight container in the fridge for up to 5 days or in the freezer for up to 3 months.
