Customize the protein and veggies to fit whatever you have on hand—chicken, shrimp, beef, or even lamb – all work beautifully. Plus, it comes together in about 45 minutes, making it perfect for a cozy weeknight dinner.
Serve it over cauliflower rice for a light, grain-free option or with mashed white sweet potatoes for an extra dose of comfort and nourishing carbs. However you enjoy it, this curry is sure to be a go-to in your AIP meal rotation!

AIP-Friendly Curry Recipe
♥ RECIPE & IMAGES BY: Kelby Signorotti ♥ A Cozy, Anti-Inflammatory Hug in a Bowl! Enjoy it as a flavorful soup or over cauliflower rice or mashed white sweet potatoes for a hearty meal!
Ingredients
- 1 lb protein of choice (chicken, shrimp, beef, or lamb)
- 1 tbsp coconut oil
- I small onion, finely chopped
- 3 cloves garlic, minced
- 1-inch fresh ginger, grated (fresh ginger adds heat to your curry)
- 1 cup additive-free full-fat coconut milk
- 1 cup bone broth (or water)
- 1 tbsp turmeric powder
- 1 tsp ground cinnamon
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp ground ginger
- 1/2 tsp sea salt (or to taste)
- 1 tbsp fresh lemon or lime juice
- 1 ½ cups chopped AIP compliant vegetables like carrots, zucchini, cauliflower, asparagus or sweet potato
- Fresh cilantro for garnish (optional)
Instructions
- Heat coconut oil in a pan over medium heat
- Add onion, garlic, and ginger, and sauté until fragrant (about 3-5 minutes)
- Add your protein and cook until browned
- Stir in turmeric, cinnamon, ground ginger, oregano, and sea salt. Mix well
- Pour in coconut milk and bone broth. Bring to a simmer
- Add chopped vegetables and cook for 15-20 minutes, until tender
- Stir in lemon/lime juice before serving
- Garnish with fresh cilantro (optional)
