These Coconut Collagen Bliss Balls are not only delicious, they’re also Paleo, AIP-friendly and nut-free! And packed with collagen and fiber for a heavenly healthy treat!

Instructions

  1. If your dates have pits in them, remove them. Soak in warm water for 10 minutes.
  2. If your coconut manna is hard, place the whole jar in a bowl of hot water to soften (I don't recommend microwaving it as it can burn very quickly)
  3. While dates are soaking, add shredded coconut, coconut flour, grass-fed collagen, cinnamon, ginger and sea salt to food processor and pulse a few times to mix.
  4. Drain dates. Add drained dates and softened coconut manna to food processor and pulse until well-combined.
  5. Use a small spoon or mini cookie scoop to scoop mixture into small balls on a cookie sheet.
  6. Roll with your hands, then roll in shredded coconut and place back on the cookie sheet.
  7. Transfer to fridge to chill for 30-60 minutes, then enjoy!

Notes

Storage:

Store in an air-tight container in the fridge for up to a week, or in the freezer for up to a month.If eating straight from the freezer, let thaw a few minutes before biting into them.

Variety is the spice of life!

You could also roll them in freeze-dried raspberries or strawberries crushed into a powder, to switch things up a bit!
