Make these Carob Collagen Bliss Balls for a quick and easy AIP, Paleo, nut-free treat for a crowd, or keep them all for yourself! Packed with antioxidants, fiber and collagen for a gut-loving treat!

Instructions

  1. Pulse coconut flour, collagen, carob and vanilla powder in a food processor until combined.
  2. Add coconut oil, pitted dates and water and pulse until well combined. You may need to scrape down the sides and break up the ball a couple of times to make sure everything is incorporated well.
  3. Use a small spoon or mini cookie scoop to quickly measure out approximately 32 small balls, dropping them on a cookie sheet as you go.
  4. Form each into a tidy little bliss ball with your hands, then roll them each in extra carob powder and place it back on the cookie sheet.
  5. Transfer to fridge to chill for 30-60 minutes, then enjoy!

Notes

Storage:

Store in an air-tight container in the fridge for up to a week, or in the freezer for up to a month.
If eating straight from the freezer, let thaw a few minutes before biting into them.

Variety is the spice of life!

You could also roll them in finely shredded coconut or freeze-dried raspberries or strawberries crushed into a powder, to switch things up a bit!
