So as not to lose this deliciously invaluable resource (and one of our group’s faves), I’m reposting it with credits to it’s original recipe creator so that it can live on and be enjoyed by AIP families for years to come!

These tender, flavorful make-ahead breakfast bites are a hit with all ages—and they’re as versatile as they are tasty (try making them with chicken or turkey too!). Whether you’re packing lunchboxes, prepping grab-and-go breakfasts, or serving them as a protein-rich snack, appetizer or easy dinner, these little gems deliver. With just a handful of ingredients and no need for breadcrumbs or eggs, they’re a simple, nourishing option for busy days. Bonus: They’re freezer-friendly!

Butternut Breakfast Bites

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper (this makes for easy clean up)
  2. Combine all ingredients in a large bowl. Use your hands or a spoon to mix until everything is well incorporated.
  3. Shape the mixture into small meatballs, about 1 to 1½ inches in diameter. Place them evenly spaced on the prepared baking sheet.
  4. Bake for 18–22 minutes, or until the meatballs are cooked through and lightly browned on the outside.
  5. Cool slightly before serving. Enjoy warm, or let them cool completely for meal prep and on-the-go snacking.

Notes

Storage: Keep leftovers in an airtight container in the fridge for up to 4 days, or freeze for longer storage.

Air Fryer Instructions:

  1. Preheat your air fryer to 375°F (190°C) for about 3–5 minutes.
  2. Prepare the meatballs as above and arrange them in a single layer in the air fryer basket, leaving some space between each to ensure even cooking.
  3. Cook for 10–12 minutes, shaking or turning the meatballs halfway through the cooking time for even browning.
  4. Check for doneness — the meatballs should be cooked through and nicely browned outside. If needed, add 1–2 extra minutes.
  5. Let cool slightly before serving.
